Mexican Soup

Super easy one pot soup. Simply chop onion and tomatoes and cook for few minutes. Add rest of veg, I used mushroom, flat beans, asparagus (but any veggies will do, seasonal is always best) Add the spice and cover for 10 minutes on medium heat. Stir in the spinach and cook covered for a few more minutes, maybe 5 minutes until the spinach has wilted. Season and serve up.
